AUTOMATIC DOUGH DIVIDER

Automatic portioning machines are machines that allow you to cut a piece of raw dough into several portions, both small and large, with an equal shape and weight depending on the model.

Work cycle
1. introduce the product in the tank;
2. set working times (pressing and cutting);
3. close the lid;
4. the press machine and cut in automatic;
5. manual opening of the lid;
6. remove the portions of dough cut.


T1-Press time: is the time that serves to distribute the dough inside the vat in a uniform manner, so that in the cutting phase each portion has the same weight and volume. If the exterior portions are heavier than the interior ones, it will be necessary to reduce the time; On the other hand, if the weight is lower, it is necessary to increase the time.


Advice: put an abundant amount of flour in the tub and on top of the product, facilitating in this way the distribution of the dough in the tub; It will also be easier at the time of cutting to keep the obtained portions well separated from each other.


T2-Cutting time: this is the time necessary for the blades to cut the product homogeneously inside the tank. Excluding the cutting time, you can only make the pressing and therefore obtain a piece of bread only (which should be used in machines with rectangular tub).


Optional: rack support (only in portioning machines or presses with rectangular bowl).
